Socca

Socca is a thin, savory flatbread or pancake made from chickpea flour, water, olive oil, and salt, traditionally cooked in a hot oven or over a wood fire and served street-food style. It originates from Nice, France, and the Ligurian coast of Italy (where a similar version is called farinata). It is popular as a gluten-free snack and a symbol of Niçoise street food culture.
