Barbecue refers to both a cooking method—slow-cooking meat over indirect heat and wood smoke, or grilling directly over hot coals or gas flame—and the social gathering built around it, where friends and family cook and eat outdoors. Regional barbecue traditions vary widely, from Southern U.S. pulled pork and brisket to Korean tabletop grilling and Argentine asado.
